Roasted broccoli in an aromatic honey and mustard glaze is a perfect side dish for meat or fish.
This dish is quick and easy to prepare: after roasting, the broccoli is drizzled with a sweet and savory glaze made from pantry staples like vinegar, honey, mustard, and soy sauce.
Tips:
- Broccoli can be halved and stored in the refrigerator for up to a day.
- The glaze can also be made ahead of time and kept in an airtight container at room temperature for up to three days. Just give it a stir before using.
Ingredients:
- 1.5 kg broccoli
- 1/4 cup olive oil
- 1 tsp salt
- 1/4 tsp black pepper
- 2 tbsp apple cider vinegar
- 2 tbsp honey
- 2 tbsp mustard
- 2 tsp soy sauce
Preparation:
- Preheat the oven to 200°C (400°F) and line a baking sheet with aluminum foil.
- Place the broccoli in a large bowl or pot. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
- Remove the aluminum foil from the oven. Arrange the broccoli evenly on a baking sheet, cut side down.
- Roasting: Bake for 15 minutes. Remove the broccoli from the oven, toss it, and return it to bake until golden brown and tender, about 12–15 minutes, depending on the size of the florets.
- Prepare the Glaze: While the broccoli roasts, whisk together the vinegar, honey, mustard, and soy sauce in a small bowl.
- Coating the Broccoli: Once the broccoli is roasted, take it out of the oven, drizzle the glaze over it, and toss well to coat evenly.
- Final Step: Return the aluminum foil to the now-turned-off oven and let the broccoli sit for about two minutes to absorb the glaze.
